Small-scale processors are often at odds with food safety regulations and thus inspectors because the regulations are based off of large-scale production practices. So, Michigan State University PhD student Jennifer Buckley used a NCR SARE grant to find out how to make both the processors and inspectors more satisfied with the system. Her findings are represented in a webinar that features a panel discussion of representatives from Michigan Department of Agriculture and Rural Development and small-scale Michigan processors about the way in which inspectors and processors can work together to meet food safety regulations.
